The industrial coating is a complex and technical process which requires a wide range of ingredients and additives. In Quimidroga we have products intended for the different stages of this process.
The breading consists in covering the food with breadcrumb. There is a great variety of breadings according to their granulation, colour and ingredients composition. The flouring is the first layer given to a food so that the following layers get better adhered, thus avoiding “blanks”, etc. In order to do so, we use flours, native starches and modified starches.
The adhesion batter is the substitute of the egg used at home for the food industry. We obtain the same adhering effect using starches, hydrocolloids (guar gum, xanthan gum, etc.), etc. and mixtures of them. When the adhesion batter is on the outer layer, it is called coating.
The tempura is a deep frying at very high temperature for a short time. They have a promoter such as the mixture of sodium bicarbonate with sodium pyrophosphate or other acids (tartaric, citric…).
Finally, for the very fine coatings, known as Clear-coating, we use dextrins, modified starches and high amylose starches.
